Hello again! I’m extra pleased on this Sunday evening because I’ve managed to conquer my sudden but inevitable eclipse FOMO. Portland is almost in the path of totality (I’ve been learning new terminology left and right for this thing) so many of my friends are making plans to head south to see the event tomorrow.
Mr Never Cooks however has to go to work rain or shine, sun or no sun. And hey, there are plenty of things I’m happy to do solo, but finding a way to go 50 miles in the worst traffic in Oregon history while on my own seems like a surefire way to turn a cool event into a stressful mess. And I prefer to have my partner along for all stressful messes.
So, instead I’m settling for the 99.5% eclipse and putting stargazing at Machu Picchu on my bucket list. I had a friend show me pictures from his trip there and I’d say the starry night sky is enough to tide me over until the next total solar eclipse in 2024.
Speaking of bucket list trips, it would be nice to have money in the bank to actually check a few more big ticket items off. Food is a big expense in our household and it can be challenging to cut down too much on the grocery budget. How do I fix this?

When I was just learning how to cook toward the end of college and my first years post-grad, I was on a decidedly tight budget and in need of cheap meals. It was a pretty sweet deal to just have dinners to arrive on my plate in the cafeteria with zero thought or input from yours truly, but sustaining that lifestyle on the daily requires a job a few pay grades above mine.

It’s finally no longer scorchingly hot in Portland and I’m so happy about that, even if I don’t want Summer to teeeechnically end. I also appreciate that although it rained last night, it didn’t specifically rain on me. I really want more of this temperate weather at a time when I’m NOT joined at the eyepiece to a microscope for 10 hours on a Saturday (oh, science, you tricksy brat).
I’m extra glad that I got in my smoothie madness this past week though, those breakfasts are perfectly paired with the 90 degree days when all you want to do is make it to work without sweatily adhering yourself to your train seat (TMI? Yes, almost certainly).

If I dig back through my Instagram pictures (lord, I don’t suggest it before the advent of the iPhone 6) I get to see all my progress since precisely April 19th, 2015 following Tone It Up’s nutrition guidelines and recipes. That would be well over 2 years and 25 extra pounds ago by my reckoning. Before that date, I had been stuck in a rut from years of failed calorie counting, bad fad diets (cabbage soup anyone?) or stressful work-sponsored weight loss programs and I needed to figure out how to stop yo-yo dieting. I hope you’re all enjoying digging into these weekly menu plan recaps because I’m loving cooking them up as a fun Sunday ritual. Plus, it allows me to share my favorite kitchen or meal prep tips as well as keeping me honest with making healthy recipes. I won’t lie to you, Pizza Hut almost happened this week except they don’t deliver to my new apartment, which is both the best and the worst thing all at once.
I will also admit that I very nearly drove to pick one of those bad boys up. The ONLY thing that stopped me from dealing that death blow to my mildly lactose intolerant stomach was the knowledge that I’d be wasting the food in my fridge.
Well, that and the fact that it was a million degrees outside.
This post could be subtitled “How to Eat for the Long Awaited Fiery End of Days,” although I think we all know in a real apocalypse I’m just eating buttered biscuits nonstop until the moment the zombies get me.
This week Portland is about to outdo itself in the weather department with temps climbing to 109 degrees. I grew up in Phoenix, so I know just how awful it’s about to feel as we step out into that dry sauna heat. Continue reading
