Tuesday’s post was all about how I planned another week of effortless healthy meals without breaking the bank using the same handy little meal formula. You can really draw your inspiration from anywhere to make these One Bowl Dinners come to life: a stray ingredient you’ve been wanting to use, your favorite ethnic cuisine, a deconstructed version of a sandwich or wrap, and a leftovers clean-out are some of my favorite. Check out that post to see the general outline of what I put into every bowl to make sure it’s healthy, balanced and filling each time.

If you ever have a hard time coming back from the weekend full force in the kitchen, this Mexican bowl is just the thing come Monday night. The chicken was just made with some Instant Pot magic (chicken breasts + salsa = the best damn thing since sliced bread). Add in quinoa, black beans, chopped tomatoes & bell peppers, guacamole, Greek yogurt, and salsa and you’re golden.

Pro tip: Pre-make a large batch of your quinoa alongside the chicken over the weekend or on Monday night.

It’s very nearly the end of summer and most people seem determined to make the most of it while they can up here in the Pacific Northwest. For some that means weekend trips to the coast, for others it’s spending time in the National Parks, and a few even head out of their home state entirely for a full vacation. This week has become filled suddenly with dinners out at our wedding venue, re-testing a few recipes from last week before they go up on the blog, and a family vacation over Labor Day weekend to the Oregon Coast. Work in my lab has picked up a bit as well, so I’m heading to the rental house a few days after my fiancé.

I put up a travel guide to Oceanside and the Oregon Coast last year, and I’m hoping that this trip will be just as rejuvenating. I’m lucky that Mr Never Cooks has a wonderful extended family who in fact do love to cook, drink some good wine, and play a few games of Spades long into the night.

One struggle I know many of my friends in the wellness world have is striking a balance with food and fitness that makes them happiest on vacations. Instead of a menu plan this week, I thought I might share some of the tips I use to maintain my health without ruining the whole idea of a vacation in the first place.

I don’t think it’s a secret after my menu planning post for this past week that I’m a big Costco fan. Bulk groceries are my jam these days, especially since I’ve really started having an easier time making similar dinners every week with a bit of a twist to them each time.

If you’re trying to eat on a more limited budget, feeding a bottomless pit in your house, or trying to eat a healthier diet without spending too much time in the kitchen, meals like these will be life-savers and can be surprisingly doable at a notoriously expensive store like Costco.

How to Feel Healthy & Accomplished with Grapefruit & Egg Avocado Toast

Yes that’s right, I said ACCOMPLISHED. Does no one else feel that way after breakfast??

I feel like it’s been a minute since I posted my first two quick and healthy avocado toast recipes but I’m finally here with the third and final one! I’ve been loving the orange & fig and mango & ginger versions on repeat for a while now, they’ve been the perfect breakfast for before a long run for marathon training or to help build muscle after a strength training workout.

For this last recipe I’ll admit that grapefruit is a tough nut to crack. Or I guess I should say fruit to peel? And peel. And then peel some more for good measure because we’re determined and foolish creatures with opposable thumbs and we want to win, damn it.

I might be new at the grapefruit game but I’ve been ridiculous and dramatic for decades.
