Sunday Recap from a Week of Easy Healthy Dinners

Moving, it turns out, is one of the most awful experiences that I’ve happily run headlong into. I now understand how my parents have lived in the same house for 35 years and I get why we couldn’t move to someplace nice like Minnesota or Maine (I was a boring child I think).

Throughout this month from hell, though, I realized that sticking to my healthy habits is key for avoiding some serious emotional breakdowns (mostly). I get hangry, I have sugar crashes, my acid reflux flares up at 2am if I eat too late, and don’t even think about asking me to move furniture if I haven’t eaten in the last 3 hours. Continue reading

Orange & Fig Avocado Toast

I’ve been increasing my mileage for marathon training (finally) and one of the habits I’ve been trying to pick up is eating before a morning run. I’m usually an empty-stomach-maybe-some-coffee runner, so it’s been challenging to find something I enjoy eating beforehand. Which, by the way, is the only time you’ll EVER hear me say the words ‘I’m having a hard time eating more food.’

One Tip for Meal Prep You’ll Love

One Tip for Meal Prep You'll Love

Alright, so my fridge often looks like organized chaos, but it’s my organized chaos. My kitchen is this topsy turvy place that I love to spend time in where I mesh my ideas of health, frugality, tastes and compromise with my beloved-if-somewhat-picky fiancé. Continue reading

5 Thoughts I Had to Let Go of to Be Successful with Minimalism

Peanut Butter & Apple Overnight Oats

You all might have noticed a…trend, shall we say, in my recipes. Can you even call it a trend when all you want to eat 24/7 is variations of the same meal? I feel like there are more accurate terms here, like obsession or craze or infatuation or having a bee in one’s bonnet (okay, I admit to using a thesaurus for that last one but I love it so it stays). Backpacking in the Pacific Northwest: Day Three

Alright friends, I’m ready to bring you the stunning finale of this epic saga detailing the odyssey of Julianne & Lindsey on the high…ridgetops. BUT FIRST. I need to make an addendum to day 2. Right a wrong, really. Correct a glaring error. Un-omit a stunning omission. Something that happened on day 2 that I did not include on Day 2.

Dried Fig Overnight Oats Recipe

Dried Fig Overnight Oats

Last year I blinked and managed to miss all of fresh fig season, apparently. For a gal who had never tasted a fig until 3 years ago but is now a full fig convert, that was a brutal discovery. After that betrayal I’ve been on a dried fruit odyssey of sorts so that I’m not at the mercy of a teeny tiny seasonal window for my favorites. Continue reading
