I’m going to assume you don’t need me to remind you that you can usually lace up those sneakers and go on a run while on vacation if that’s your thing. I honestly have a hard time running routes I’ve never been on before, so I put together a list of workouts that I can do without packing my entire home gym. You might also notice that none of these workouts are terribly long, either. I’d prefer to spend my vacation time with my loved ones, so I try to get in a quick workout in the morning to feel like my best version of myself and then just not worry about it while I celebrate or play or relax. I’m writing this post on the road through Idaho with my future mother-in-law and 2 dogs on our way back to Portland. Tuesday’s post was all about how I planned another week of effortless healthy meals without breaking the bank using the same handy little meal formula. You can really draw your inspiration from anywhere to make these One Bowl Dinners come to life: a stray ingredient you’ve been wanting to use, your favorite ethnic cuisine, a deconstructed version of a sandwich or wrap, and a leftovers clean-out are some of my favorite. Check out that post to see the general outline of what I put into every bowl to make sure it’s healthy, balanced and filling each time.
If you ever have a hard time coming back from the weekend full force in the kitchen, this Mexican bowl is just the thing come Monday night. The chicken was just made with some Instant Pot magic (chicken breasts + salsa = the best damn thing since sliced bread). Add in quinoa, black beans, chopped tomatoes & bell peppers, guacamole, Greek yogurt, and salsa and you’re golden.
Pro tip: Pre-make a large batch of your quinoa alongside the chicken over the weekend or on Monday night.
The official beginning of Fall is right around the corner (7 days, 7 hours, and 2 minutes but who’s counting) which means that it’s time to revisit any Summer bucket lists you might have made. If you’re the type of person who doesn’t need written out aspirations to get off your phone and exploring somewhere or something fun, I applaud you. If, however, you often need your Fitbit or that annoying little Netflix are you still there message to remind you that you’ve spent all weekend glued to your couch, then seasonal bucket lists can help avoid that feeling of dread as Summer draws to a close.
Here are the five things I learned while trying to check everything off of my own list.
1. Make sure your Bucket List aligns with your health & fitness goals
Okay, so maybe you wanted to try every microbrewery in your city. Or check out all the local wineries. Picnic in the park with your beloved (spouse, partner, friend or dog). If your list has you eating cheese and drinking cocktails just to keep up, perhaps you were a little too ambitious when you made it. For every item on your list that involves a bit of a treat, add on another that contributes to your overall wellness.
Adding in physical activities like hiking, trying new workout classes, or simply taking more walks with your loved ones can help you stay in line with your health goals. Pick a farm-to-table restaurant to try, or maybe plan a dinner night in using only seasonal produce. Balance is how these healthy habits become permanent lifestyles. Continue reading
